Pumpkin Protein Pancakes

Michael was really craving some pumpkin pie.. obviously that's not an option, so I decided to get creative and test out

these festive and seasonal Pumpkin Protein Pancakes!

Pumpkin Protein Pancake Recipe:

1 scoop Vanilla/Unflavoured Protein Powder

1/2 cup Oat Flour (blended oats)

1/2 cup Almond Flour

1/3 cup Pumpkin puree

1/4 cup Egg Whites

1/8 cup Almond Milk (unsweetened)

2 tbsp Pumpkin Pie Spice

1 tbsp Cinnamon

1 tsp Stevia

Blend together in a bowl until there are no lumps. I like to cook pancakes in coconut oil as it gives them a sweet taste! Cook on Med/High until golden. Top with Greek Yogurt mixed with vanilla protein and cinnamon.
